【Macau, November 9th, 2018】Being one of the oldest countries in Europe, Portugal has a rich gastronomic tradition. Portuguese food is famed for being remarkably tasty and varied. So is its wine! The upcoming “Quinta da Romaneira Wine Pairing Dinner” on November 23rd, Executive Chef Luis will prepare a selection of delicate, legendary dishes of Portugal and present their characteristics and rich cultural background to the guests. In addition, each course is expertly paired with the wine chosen by Vinomac that features the favourites from the historic winery in Douro, Quinta da Romaneira. Its owner Ricardo Campos will also appear and share the wine knowledge at the dinner event, guests will be served during the welcome cocktail beginning at 7:00pm. The menu is also available from November 12th through December 9th for your savouring on the fantastic flavours of Portugal.

 

A Taste of Portugal’s Legend

To prepare for this wine pairing dinner, Executive Chef Luis Américo has handpicked some of the most legendary dishes in Portugal. Most of them request very detailed skills and many steps in cooking. Each of the dishes is carefully paired with the premium wine from Quinta da Romaneira which has more than 260 years of history.

 

The menu is kicked off with the Legendary Pork’s Head Terrine from Alentejo with Crispy Pork Ear which takes more than 36 hours to cook. Alentejo has Portugal’s richest culinary heritage and is famous for its pork. The rich flavours are perfectly elevated by Quinta da Romaneira Branco – White Reserva 2017 which shows fine aromatic nose and some cedar notes.

 

The second pairing will be an interesting demonstration to show that it is not a must to pair seafood with white wine! A dish like Coriander Cream Soup with Cod Confit, Chorizo and Clams which features a wide variety of flavours is with no doubt best matched with wine like Sino da Romaneira Tinto – Red 2013 which is floral, well balanced and with some notes of black pepper.

 

Many dishes of this wine pairing dinner exemplify the detailed cooking skills and sophistication of Portuguese cuisine. The third course Braised Ox Tongue with Green Pea Textures and Sautéed Mushrooms is cooked for more than 24 hours with onion, garlic, bay leaves, tomatoes, white wine, etc. This tasty dish perfectly goes together with Quinta da Romaneira Tinto – Red 2012 which is balanced, elegant and with rich tannins.

 

A highlight of this dinner is the Ox Tripe Stew with Carrots based on the world gold medal winner dish from Aviz Hotel in 1958.  This dish requests multi-steps and more than a day to cook. The intensely savoury taste from ox tripe, celery, carrots, butter, onions, parsley and many more ingredients perfectly matched with Quinta da Romaneira Reserva Tinto – Red 2013 which is rated 91 by Robert Parker.

 

The dinner ends with a sweet note from the popular Portuguese dessert Olive Oil Egg Pudding with Orange and Black Olive Powder, it creates an indulgent harmony with Quinta da Romaneira 10 Year Old Tawny which is often considered one of the most famous wines in the Douro region.
